Zucchini Parmesan--Laura Style

I know, I know.  You have all been dying for me to post again.  I was hoping that either Erica or Gwen would post so that it wouldn't just be Kathy and me posting back and forth.  But, alas, they do not seem to be writing anytime soon so here goes.



I made this awesome meal a few weeks ago and it was awesome.  Did I mention it was awesome? 
I started by slicing up two zucchinis and dipping them in egg.  Then I rolled 'em around in some bread crumbs, parmesan cheese, and a little flour.  I heated up some oil on the stove and popped the cute little breaded zucchinis in and watched them sizzle.  Well, I heard them sizzle.  I guess one can see sizzling as well--the little bubbles that form along the edges of the thing that is being fried.  Anyway, after a minute or two I flipped 'em so they could brown up on the other side.  Once they were done I put them in a pan and sprinkled some mozzerella cheese on top.  Then I threw them in the oven, literally, for a few minutes for the cheese to melt and the zucchini to cook a little more.  I served it with spaghetti and marinara sauce.  Delightful. 
Best eaten whilst wearing pearls and a wolf t-shirt.
